Last year my boyfriend and I spent the first 24 hours of our Italy travel in Pisa. Because we only had limited time we started exploring the city quite early in the morning including a hunt for the best ice cream parlour in town, and went to the main tourist trap afterwards, also known as the leaning tower of Pisa. Although Pisa is quite a touristy place I would still recommend visiting the city for one day (which is absolutely enough to see the highlights and taste some incredibly good ice cream) because of its prettiness.

Love, Anne

My recommendations regarding ice cream and food spots:

Il Vecchio Forno Via Cavalca, 28
Are you looking for an affordable, simple lunch or bite while exploring Pisa? At this small food shop you can grab some sweet treats or a sandwich with tasty prosciutto crudo or Italian cheese on the go.

De'Coltelli  Lungarno Antonio Pacinotti 23
De'Coltelli offers various delicious and unexpected ice cream flavours. Their ingredients are natural which makes the taste of the ice cream extra intense.

La Bottega del Gelato  11, Piazza Garibaldi
Another great spot for ice cream, so I suggest you should give both gelateria's a try (the more ice cream the better right?). La Bottega del Gelato offers more traditional flavours than De'Coltelli but the quality is just as good.
